How to cook for one or two people

As I work with all kinds of people, it is a common complaint of many that it is hard to cook for just one, or even two, people.  I can totally understand this one.  As a young person, I lived in a family that had lots of people around ALWAYS.  But as society changed and our family became more spread out, the numbers at our table dwindled.  I worked in a kitchen that cooked for 130 people daily when I was in my thirties and had six kids at home.  Time has sure changed that picture!

So what do you do as kids leave, family spreads out, and we find ourselves providing for our food needs with a small number to make happy?  One thing I have learned is that food serves many purposes.  Finding out what place it takes in your life will help you to decide how to "pare down" your skills and still enjoy all food can be in our society.
