Fall Superfoods

I always get friends and clients that complain this time of year about having a boring diet. It can be difficult to maintain variety here in Missouri when all the "summertime" fruits and vegetables are no longer available. Often, it is just because they forget to incorporate our fall type vegetables and foods into their winter menus. Squashes, root crops, and apples are all abundant this time of year, as well as versatile. I have found almost any kind of vegetable (and some fruits) can be combined into a tasty soup. If you are bored with your diet, or are unsure of how to fix a new food, give me a call!
